Stellarys appears as an Alpha Boss Aniimo in the Forest of Falling Stars and also as one of the Aniimo spawning during Wild Surges in Nurture Bloom alongside Celestis, its Lumin Stage.
Right in the middle of the Forest of Falling Stars area, there's an Alpha Aniimo Boss arena. Enter the arena and challenge Stellarys to have a chance to earn rewards such as Windborn Stamps, Night Stones, Credits, and EXP. Alpha Aniimo have a low Capture Rate, but you can use a Sparkling Cube or an Aniipod Ultra to secure the catch.
