Super Saiyan Blue is what gives Goku and Vegeta the edge they need to keep up with the multiverse's greatest fighters. Without SSB, Universe 7 would have lost the Tournament of Destroyers and been destroyed by Goku Black.
Goku's mastery of Super Saiyan Blue is especially powerful. He beats Golden Frieza into submission, gives Hit his first real challenge, and even allows him to go toe-to-toe with Super Saiyan Broly in Dragon Ball Super: Broly (for a bit). As Goku's main form in Ressurrection F, the Universe 6 Tournament, the Goku Black Saga, most of the Tournament of Power, and Dragon Ball Super: Broly, Super Saiyan Blue also holds the distinction of being Goku's most used form in Dragon Ball.
Super Saiyan God operates very differently in the manga compared to the anime. Whereas Goku and Vegeta use the standard version of Super Saiyan Blue for most of the Dragon Ball Super anime, it quickly becomes outclassed in the manga. Toyotarou's version of Super Saiyan Blue has serious stamina and Ki issues, to the point where triggering the form even once beforehand will lower its effectiveness by rough 80-90% on subsequent transformations.
This is the main reason Hit ends up beating Vegeta in the Universe 6 Tournament. To get around this drawback, Goku begins secretly training to make SSB stable. While fighting Fused Zamasu in the Goku Black Saga, Goku debuts Mastered Super Saiyan Blue. With no stamina issues whatsoever, Goku can use SSB's full power for longer. He even puts in a better fight than Vegito Blue did, who was using the basic Super Saiyan Blue. Goku ends up using Mastered Super Saiyan Blue as his main form in the Dragon Ball Super manga until he unlocks Ultra Instinct.
Super Saiyan Blue Kaioken x20 is an absolute beast of a form, and it's about to make a long-awaited comeback in Dragon Ball Super: Beerus. In the Dragon Ball Super anime, the first time Goku busts out SSBKK is during his battle with Hit. Realizing he has no way of countering Hit's time skip, Goku uses Kaioken to brute force his way around the technique and begin to beat Hit back. In the manga, Goku uses Super Saiyan Blue Kaioken against Jiren before Roshi teaches him how to trigger Ultra Instinct.
